- 2 thick cut steak like tenderloin ribeye or New York strip
- 1 sprig fresh rosemary fresh thyme also tastes great
- 4 tbsp butter
- Kosher salt
- fresh ground pepper
- 2 tbsp olive oil
Remove steak from refrigerator, dry it well with a kitchen towel. Season it with salt and pepper in abundance and leave the meat at room temperature for 20-30 minutes before cooking.
Heat up the olive oil in a pan, add the meat and sear on medium-high heat for 4 or 5 minutes. Do not move the steak in the pan, otherwise you do not get a beautiful sear.
Turn the steak on the other side, add 2 tablespoons of butter and a fresh rosemary twig. Pour melted butter with a spoon over steak, as you sear on the other side for another 4-5 minutes.
Move the pan into the hot oven preheated at a high temperature to finish the steak and to reach the desired grade – either “rare”, either “well done”.
When the steak is ready, remove it from the skillet, lightly cover it with aluminum foil and leave it for 5-10 minutes. Optionally, cover it with a little butter before serving.
